INTRODUCTION

Individuals who are malnourished as a result of a lack of physical availability to food, as well as a lack of social or economic access to adequate food, are said to be suffering from food insecurity. Food insecurity manifests itself in physical symptoms caused by energy and nutritional deficits caused by an inadequate or unbalanced diet, or the body’s inability to adequately use food owing to disease or sickness.

According to the FAO (2010), food insecurity refers to the consequences of a lack of healthy food consumption, with the physiological use of food by the body coming under the category of nutrition and health. Malnutrition also causes poor health, making it harder for individuals to provide for their family. If hunger is neglected, it triggers a chain reaction that prolongs starvation, reduces parents’ ability to work and give birth to healthy children, and undermines children’s ability to study and live productive, healthy, and happy lives. This stop in human growth jeopardizes a country’s ability to flourish economically in the future.

Famine and hunger are both caused by a lack of food security. Food insecurity may be defined as either long-term or short-term. Food insecurity makes people more vulnerable to famine and hunger, and ensuring food security requires removing that vulnerability. Chronic insecurity is similar to malnutrition and is associated with poverty, which is particularly frequent in poor countries. Understanding the causes of food insecurity may help us identify solutions since no problem can be solved unless its roots are grasped. It’s difficult to discuss the causes of Nigerian food insecurity since the majority of Nigerians have lost interest in locally produced food.

Because oil money has moved most Nigerians’ tastes toward foreign/imported items, the government felt that importing food was better than initiating local production (FAO, 2010). Despite the aforementioned variables, the following categories may be used to classify the causes of food insecurity in Nigeria:
Food insecurity, according to the FAO (2010), refers to the effects of insufficient intake of nutritious food, with the physiological utilization of food by the body falling within the area of nutrition and health. Malnutrition also leads to poor health, which makes it difficult for people to support their families. Hunger puts in motion a cascade of events that prolong malnutrition, diminish parents’ capacity to work and give birth to healthy children, and undermine children’s ability to learn and live productive, healthy, and happy lives if left ignored. This halt in human growth jeopardizes a country’s economic development potential for future generations.

Food insecurity is at the foundation of both famine and hunger. Food insecurity may be classified as chronic or temporary. Food instability leads to a high level of susceptibility to famine and hunger, and providing food security necessitates the removal of that vulnerability. Chronic insecurity is akin to malnutrition and is linked to poverty, which is prevalent mostly in developing nations. Because no issue can be treated until its origins are understood, understanding the causes of food insecurity can aid us in finding solutions. It’s difficult to talk about the reasons of food insecurity in Nigeria since most Nigerians have lost interest in locally produced food.

OVERVIEW

Goat dropping,were evaluated with recommended level of inorganic fertilizer for vegetable (AmaranthusHybridus). The highest crop yield was obtained by the application of goat dropping combined with the recommended level of inorganic fertilizer. The lowest yield was obtained by the application of goat manure only. In addition, the results revealed that the goat manure and cattle manure were inferior to goat dropping as a source of organic manure for vegetable (AmaranthusHybridus) cultivation. The goat droppinggave a higher yield when compared to the sole application of goat dropping. The soil analysis showed that the nitrogen content and phosphorus content of goat dropping treated plots were higher than other treatments tested.

But potassium content was higher in goat manure treated plots. The results further revealed that the goat dropping has a beneficial effect on crop growth and yield compared with other treatments. Therefore, the combined use of goat dropping with inorganic fertilizer application has been recognized as the most suitable way of ensuring high crop yield.

CHAPTER ONE/INTRODUCTION

An extensive literature documents the potential for integration of pasture and goat dropping in plantation agriculture (Shelton et al. 1987). The integration of various crops and animals enables synergistic interactions, and result in a greater additive and total contribution than the sum of their individual effects (Edwards et al., 1988) cited in Devendra, 2011.The principal advantage of integration of goat droppingon the performance of AmaranthusHybridus is the total farm productivity and sustainable agriculture in the context of efficient natural resource management, together with attendant benefits of reduced weeding and fertilizer costs, improved soil fertility due to the return of dung and urine and value addition to the tree crop (Devendra, 2004).

These cropping in the forest zone carry lush leguminous cover crops such as AmaranthusHybridus. Such cover crops grow profusely and have to be cut down regularly, which is an expensive operation (Devendra, 1991). The animals are introduced to keep grass and weeds short to prevent excessive nutrient and moisture competition with the crop.

In spite of the numerous advantages associated with the above practice, any demerits that may be associated with it must be examined. Most studies have been centred on the growth of the plants (Tan and Abraham, 1981), weed control by the animals (Tan and Abraham, 1981) damage by the grazing animals (Tan and Goh 1988) and economies of combined grazing and chemical control (AniArope et al. 1985). One area that has not been studied is the effect of the dropping of the animals on the soil microflora and microfauna whose activities in one way or the other influence the productivity of the crops. Soil fungi break down organic matter releasing the component nutrients which are used by the plants. If the dung contains favourable compounds, the microorganisms might gain by its addition to the soil. On the other hand it may contain toxic compounds which will inhibit their growth. It may contain neither of these and will then have no chemical effect at all on the fungus.

The objective of this study was to determine the effect of the dung of goat on growth of AmaranthusHybridus, which is a fast growing fungus and commonly forms a heavy whitish growth on the upper layers of the soil. This fungus was selected because it is most likely to come into contact with the droppings of the herds of goat which could accumulate in the grazing area.

COMPARATIVE EVALUATION OF DIFFERENTLY PROCESSED WHOLE EGG POWDER

ABSTRACT

Egg is a nutrient dense food. The cylical egg glut characterized by egg spoilage, quality deterioration and wastage imparts negatively on poultry farmers. Powdered dried egg provides a convient alternative to this problem. The focus of this study was to co mpare and evaluate differently processed whole eggs into powder farm. Two experiments were conducted to evaluate the potential of whole egg powders made from different processing methods. The first compared the yield, proximate composition, microbiological load, functional properties and organoleptic attributes of fried egg and cake from differently processed (Spray dried – commercial, Freeze dried and Dehydrated) whole egg powders. The second assessed the effect of egg age on the proximate composition, microbiological load, functional properties and organoleptic attributes of cookies and cake made from dehydrated whole egg powder. The treatments in experiment one were the Spray Dried, Freeze Dried and Dehydrator Dried Whole Egg Powders represented as SDWEP, FDWEP and DDWEP respectively. Thirty five eggs each were used to produce the FDWEP and DDWEP while the SDWEP was obtained from United State of America. The Experimental design was a completely randomized design. Powder percentage yield of 1000g raw eggs (26.7%) and crude protein (52.78%) was highest (P<0.05) from SDWEP. Salmonella spp observed in raw eggs was destroyed by heat from the processing methods in the whole egg powders. The microbial load was within the 2cfu/g acceptable limits. Functional properties were generally significantly (P<0.05) higher for raw eggs than the whole egg powders, however with no significant (P< 0.05) differences for foaming capacity, foaming stability, emulsifying activity, swelling capacity and bulk density. Fried eggs from raw eggs generally had the highest (P<0.05) organoleptic rating but did not differ from SDWEP, FDWEP for texture and taste, SDWEP and DDWEP for flavour, SDWEP and DDWEP for general acceptability. All whole egg powders compared equally for all indices. Cake colour differed significantly (P<0.05) with Raw, SDWEP and DDWEP rating equally (5.50, 4.40, 4.30 respectively). In experiment two, treatment (weeks 1, 2, 3, 4) had a significant (P<0.05) effect on the crude protein indices of raw eggs with a decline from 50.96 to 42.91% as the eggs aged. Microbial load were within permissible limits. Salmonella spp and E. coli were absent. Foaming capacity declined (37.66-28.22%) with age but was only significant at the 4t h week. Emulsifying capacity, water absorption, water and oil retention capacity with values of 29.85%, 0.86g, 0.52g and 0.52g respectively were best (P<0.05) at the second week. The crude protein and ether extract of the whole egg powder declined from 50.96-42.91% and 5.01-3.87% respectively as eggs aged from one to four weeks. The Microbial load was within permissible limits. Foaming capacity (30.41%), emulsifying capacity (29.41%), swelling capacity (118.74%), water and oil absorption (0.29, 0.29%) were best (P<0.05) at weeks 2, 1 and 3 respectively. Cookies and cakes produced from whole egg powders of one to four weeks of age were generally accepted without specific preference. This study concludes that whole egg powders produced by spray, freeze or dehydrator methods are generally accepted and serve as good alternatives to fresh eggs in addition to their use in the confectionary industry not compromising the final product quality. Dehydrator dried whole egg powder from 3 week old eggs may also be safely used in the confectionary industry without health or product quality disadvantages.

PROBLEM AND PROSPECT OF MELON PRODUCTION. A CASE STUDY OF MOKWA LOCAL GOVERNMENT IN EBONYI STATE

Introduction

The need to increase and improve on the melon production in the farming system, human diets and health, diversify its uses in industries and other areas cannot be over-emphasized (Oyediran, 2013). The production of melon is constrained by low yield and little knowledge about its nutritive value (Bisognin, 2002). Melon is one of the most economically import- ant vegetable crops worldwide and is grown in both temperate and tropical regions. Melon is a climbing herbaceous crop and has annual trailing vines with nearly round stems-bearing tendrils and circular to oval leaves with shallow lobes. Staminate flowers are borne in axillary clusters on the main stem, and perfect flowers are borne at the first node of lateral branches. Fruits vary in size, shape, rind characteris- tics, and flesh colour depending on variety. Melon is known as Egusi in Yoruba language found in tropical Africa and it is widely cultivated in West Africa (Nige- ria, Ghana, Togo and Benin) and other African Coun- tries for the food in the seeds (Achigan-Dako et al., 2008). Melon plays vital roles in the farming system and in the well-being of West African rural farmers as a good source of energy, weed suppressants and for soil fertilization. It is also used as mulch, leaving high residual nitrogen in the soil after harvesting. Cultivation of melon is sustained in southwestern Ni- geria by its profitability as well as other socio-eco- nomic and cultural values. Production of the crop is more popular because of favourable weather and cli- matic condition as well as abundance of cultivable land which has made the practice of sole and mixed cropping possible in the region. The seed of melon is an excellent source of dietary oil (53.10%), high
in protein (33.80%), and containing higher levels of most amino acids than soybean meal. Melon seeds contain between 30-50% by weight of oil and offer valuable sources of vegetable oil for local and export trade (Oloko and Agbetoye, 2006). The kernels are rich in fatty acids, minerals and proteins. Despite the socio-economic, cultural, agronomic and culinary im- portance of melon, productivity has been on the de- cline in recent time. The percentage yield declines in Nigeria from 103.26% in 2007 to 92.98% in 2008. The melon farmers are constrained by many prob- lems including those of poor access to modern inputs and credit, poor infrastructure, inadequate access to markets, land and environmental degradation, and inadequate research and extension services. Also, there is no research on the effect of decline in melon output on rural households’ livelihood sustainability in southwest, Nigeria where the melon is widely con- sumed in diverse forms, and there are scanty em- pirical studies of factors that impede melon produc- tivity. Even then, smallholder and traditional melon farmers who use rudimentary production techniques, with resultant low yields, cultivate most of the degrad- ed land. It is against this background that this study found it essential to assess and review melon based farming systems so as to enhance its productivity, profitability and sustainability among the rural house- holds in southwest, Nigeria.

Specific objectives are to:

i. ascertain the personal characteristics of mel- on farmers in the study area
ii. identify sources of melon seeds planted by the respondents in the study area
iii. estimate production output of melon in the study area
iv. identify challenges to melon production in the study area
